White Labs San Francisco Lager (WLP810) — Liquid — 35 ml
Procedure
  • Single infusion mash with 3.75 gallons of 154° water
  • Batch sparge with 4.25 gallons of 168° water
  • Boil 65 minutes, adding hops according to schedule
  • Cool wort to 75°
  • Pitch yeast
Fermentation
Primary: 7 days @ 62° F
Secondary: 7 days @ 62° F
Lager: 14 days @ 40° F
Age: 14 days @ 50° F
Notes

Formulated to be true to style, but not an Anchor Steam clone. Munich malt add character and body, crystal malt adds color and caramel flavor.

Keys to success:

  • Use the specific California Common strain only.
  • Pitch a large starter.
  • 154° mash temp for body.
  • Ferment at ale temperatures (62-65° F). Start low (60°) and gradually let rise to 67° if possible.
